Ingredients
500g pumpkin, peeled
½ grated coconut
2 tbsp corn flour, 2 tbsp sugar
Batter (mixed well):
3 tbsp plain flour, 2 tbsp rice flour
200ml water, dash of salt
Method
1. Cut pumpkin into slices and steam until soft. Remove and mash into puree.
2. Add in grated coconut, corn flour, sugar and mix until well combined. Form
into small balls.
3. Coat pumpkin balls with batter and deep-fry in hot oil until golden brown.
4. Dish and drain. Serve as snack.
