Balls with Sardine Filling

Ingredients
3 potatoes, about 500g peeled and cooked
1 piece ham, diced
1 tbsp chopped spring onion
Dash of salt and pepper
1 egg, beaten, come breadcrumbs
Filling (mixed):
1 small tin sardine, 1 chopped onion
½ lime, squeezed out juice
Method
1. Mash potatoes, add in ham, spring onion, salt, pepper and mix until well
combined. Divide into 12 portions.
2. Wrap in filling and form into date shape. Dip into beaten egg and then coat
with breadcrumbs.
3. Heat up oil for deep-frying, put in potato balls and deep-fry until golden
brown. Dish and drain.
4. Serve hot with mayonnaise or chilli sauce.
